Working with Chef Cedric Vongerichten has its perks. One of them was an R&D trip to Indonesia to help concept the name and visual identity for Wayan, his first US-based restaurant. We came up with the name, which means “firstborn” and took cues of the Balinese traditional artwork and heritage to craft the look and feel for this upscale authentic eatery in Nolita. Here again, Once Upon a Time Hospitality was given tremendous creative runway to help form one of New York’s most difficult reservations.
